In 1997, I vaguely remember waking up on my birthday morning and running to my parents’ room to find my parents carrying out a big box containing a brand new toy. This wasn’t any toy, this was one of the most popular gaming systems around: the Nintendo 64. I never had the luxury of owning an NES or a Super Nintendo, so this was my first time actually owning the same console that the rest of my friends had. They all received their N64s for Christmas, and I was obviously jealous, so I constantly harassed my parents about getting an N64 for my birthday. Eight long months passed, but the six-year-old me diligently waited them out.

When the day finally came, I found myself spending many days blissfully flying Arwings and driving karts across rainbows. Little did I know that two years later, all of the Nintendo characters I came to grow and love would all senselessly fight to the death…

Smash Bros will always hold a special place in my cold, unforgiving heart. Hence, the creation of this lovely treat dedicated to the hours spent in front of Smash and its successors. Handy dandy mini chorizo frittatas, AKA Super Smash Bites.

UNIT COMPOSITION

  1. salt
  2. pepper
  3. cumin
  4. 3 teaspoons of olive oil
  5. 1/2 cup of cheese
  6. 1/2 cup of milk
  7. 1 green onion (scallions), chopped
  8. 1/4 of a red onion, diced
  9. 1/3 of a red pepper, diced
  10. 1/3 cup of broccoli florets, diced
  11. 1/3 lb of ground chorizo (if you can’t find ground chorizo, ground breakfast sausage will work too)
  12. 6 large eggs

Extra tools: 1 muffin pan

BUILD ORDER

Total prep time should be about 10 minutes. Total cook time will be about 50 minutes. This will make 3 servings, or 2 large servings.

Calories per serving: ~320 calories (if using turkey chorizo) or ~415 calories (if using pork chorizo)

OPENING

  1. Preheat your oven to 350° F (~176° C)
  2. Set a large skillet on high heat and add 1 teaspoon of your olive oil.
  3. Saute your onion, red pepper, and broccoli on high heat for about 3 minutes, or until the onions are translucent.
  4. Remove vegetables from the skillet and set aside. Keep the stove on high heat.
  5. Add another teaspoon of olive oil.
  6. Place your uncooked ground chorizo sausage in the skillet. Cook for about 7 minutes, or until done.

MID GAME

  1. When your chorizo has cooked, remove it from the skillet. 
  2. Grease your muffin pan by putting a little olive oil on a paper towel and wiping each cup.
  3. Place a spoonful of both chorizo and vegetables in each cup. The fillings should not fill more than half of the cup.

LATE GAME

  1. Beat your 6 eggs together and season with salt, pepper, and cumin.
  2. Add in your milk and stir to combine.
  3. Pour egg mixture into each cup. Do not over fill your cups with egg.
  4. Add in your cheese. Gently stir the mixture so that your fillings are mixed through the egg.
  5. Sprinkle each cup with green onion.

  6. Place muffin pan in the oven and cook for about 35 minutes, or until done. To test if your frittatas are baked all the way through, take a toothpick and pierce a frittata. If the toothpick is dry upon removal, then your frittatas are cooked!
  7. Eat!

If you’re having trouble removing the frittatas from the muffin pan, use a toothpick to gently trace around the frittata. Then, use a spoon to pry the frittata from the pan.

I played a fair amount of Brawl before I left for college. Good times, good times. When I started my first real job post college, I worked for a game publishing company who so happened to have 60″ TV in the break room. Of course, I brought my Wii and a few others bought in their Wiimotes and GameCube controllers. I mained with Toon Link and Zero Suit Samus; trolled with Wolf, Mr. Game & Watch, and Lucario.

In Melee, it was all about Marth and Fox.

I honestly miss playing, but since I left my previous job at the publishing company, I gave my parents my Wii to play Wii Sports. It’s OK, because I can just get my Smash fix by watching competitive play in Apex.
